Ingredients

  • 1 English Cucumber
  • 2 rosemary sprigs, leaves removed
  • 4 oz. gin
  • 1½  oz. lime juice
  • 1½ oz. simple syrup

Directions

  • Using a peeler or mandoline, cut the cucumber into thin strips lengthwise. Reserve two of the center strips for garnish. 
  • In a cocktail shaker, muddle the remaining cucumber strips and rosemary leaves until nearly completely broken down. Add gin, lime juice and simple syrup then fill the shaker with ice. Shake until the cocktail shaker is very cold, about 15 to 20 seconds. Strain into a chilled martini glass (or a rocks glass with ice, if preferred). 
  • To create Christmas tree garnish, create repeating folds with the cucumber strip, starting with smaller folds and increasing the size towards the end. Skewer from the top of the “tree” to the bottom. Garnish and serve.
