Ingredients
- 1 cup One Sweet® Tomatoes, diced
- 8 eggs
- 1 cup spinach, chopped
- 1 cup full fat cottage cheese
- ⅔ cup mozzarella cheese, shredded
- 1 tbsp olive oil
- 1 tsp garlic powder
- Salt & pepper, to taste
Directions
- Preheat oven to 350°F
- Grease muffin tin with olive oil
- Fill the muffin tins half way with tomatoes, spinach, and cheese.
- Blend together cottage cheese, eggs, garlic powder, salt and pepper until smooth
- Pour egg mixture evenly into the muffin tin to cover veggies, be careful not to overfill
- Top with remaining tomatoes and spinach.
- Bake for 25-30 min until browned and puffed up.
