Ingredients
- 5 Qukes, sliced
- 1 cup low-fat cottage cheese
- 9 light rye Swedish-style crispbreads
- 8 oz. wild caught smoked salmon
- ½ cup pickled onions
- ½ cup freshly chopped dill
- 1 tbsp lemon zest
- ¼ cup capers
- Crushed black pepper, for garnish
Directions
- Add a spoonful of cottage cheese over each cracker and spread evenly to form a thin layer.
- Add sliced cucumbers over the cottage cheese.
- Add a small slice of smoked salmon over the cucumbers.
- Top with pickled onions, dill, lemon zest and capers.
- Garnish with freshly crushed black pepper.
