Ingredients
- 3 packages Kumato® Tomatoes (9 in total)
- 2 tbsp EVVO
- 1/2 sweet onion chopped
- 5 garlic cloves minced
- 1 can brown lentils rinsed and drained
- 1/4 cup chopped green pitted green olives
- 1/4 cup chopped almonds or pistachios
- 1/2 cup panko breadcrumbs
- 2 tbsp chopped parsley
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp ground coriander
- 1/4 ground cinnamon
- 1/4 tsp ginger powder
- Pinch cayenne pepper
- Salt & Pepper to taste
Directions
- Preheat oven to 350 degrees and lightly oil a baking dish. Slice the tops of the tomatoes then spoon and discard the pulp inside, make sure to save the tops.
- Make the filling by adding 1 tbsp of olive oil to a skillet, cook the garlic and onion until soft and fragrant. Take off heat then combine the rest of the ingredients-lentils, olives, almonds, breadcrumbs, parsley and spices.
- Spoon mixture into the tomatoes until it’s filled then cover with the tops of the tomatoes.
- Repeat for all and bake uncovered for 30-35 min.
- Serve with fresh pita, hummus, labneh and a side salad.
