Ingredients
- 1lb quartered SUNSET® Kumato® Tomatoes
- 1 bulb of garlic, sliced open
- 1 onion, quartered
- 1 bunch of basil, ripped
- 1/2 tbsp dried thyme
- 1/2 tbsp dried basil
- 2 tsp fresh thyme
- 1/4 cup olive oil
- 1 cup vegetable stock
- 1/2 cup coconut milk
- roasted garlic oil or EVOO
- salt & pepper
Directions
- Preheat oven to 400F. In a pan, add the tomatoes, garlic bulb with the top sliced open, and onion. Season with salt, pepper, dried thyme, and basil, then coat with olive oil.
- Roast for 1 hour. Remove from the oven and set the garlic aside.
- Place the roasted tomatoes, onion, and fresh herbs into a pot and squeeze out the roasted garlic. Add vegetable broth to your liking then blend the soup.
- Pour in some of the coconut milk to thicken and stir until bubbling.
- Pour into a bowl and top with more coconut milk and roasted garlic oil.
