Ingredients

  • 1lb quartered SUNSET® Kumato® Tomatoes 
  • 1 bulb of garlic, sliced open
  • 1 onion, quartered 
  • 1 bunch of basil, ripped
  • 1/2 tbsp dried thyme
  • 1/2 tbsp dried basil
  • 2 tsp fresh thyme
  • 1/4 cup olive oil
  • 1 cup vegetable stock 
  • 1/2 cup coconut milk 
  • roasted garlic oil or EVOO
  • salt & pepper

Directions

  • Preheat oven to 400F. In a pan, add the tomatoes, garlic bulb with the top sliced open, and onion. Season with salt, pepper, dried thyme, and basil, then coat with olive oil. 
  • Roast for 1 hour. Remove from the oven and set the garlic aside. 
  • Place the roasted tomatoes, onion, and fresh herbs into a pot and squeeze out the roasted garlic. Add vegetable broth to your liking then blend the soup. 
  • Pour in some of the coconut milk to thicken and stir until bubbling. 
  • Pour into a bowl and top with more coconut milk and roasted garlic oil.
