Ingredients
- 1 lb. Campari® Tomatoes, coarsely chopped
- ⅓ cup light brown sugar
- 1 Tbsp. apple cider vinegar
- ½ Tbsp. freshly grated ginger
- ½ tsp. fresh thyme, chopped
- ½ tsp. Kosher salt
Directions
- In a heavy-bottomed saucepan, add all ingredients. Bring the mixture to a boil, stirring frequently to prevent the bottom from burning.
- Reduce the heat to low and simmer, stirring occasionally, until the mixture thickens to a jam consistency, about 1 hour to 1 hour and 15 minutes. Remove from heat and allow to cool to room temperature. Transfer to an airtight container and store in the refrigerator for up to 10 days.
