Ingredients
- 1 English cucumber, sliced with a peeler into long strips
- 1 cup prepared sushi rice
- ¼ lb. sushi-grade salmon, cut into ½” thick slices
- 2 scallions, cut into 4” pieces
- 1 avocado, peeled, pitted, and sliced
- Prepared spicy mayo, for garnish
- Sesame seeds, for garnish
Directions
- Lay a bamboo sushi mat on a cutting board. Start layering 8 or 9 cucumber slices across the mat, overlapping them as you go. Using wet hands, spread about ½ cup of the sushi rice to the bottom half of the cucumbers. Next, add two pieces of the salmon, two pieces of scallion, and 2 slices of avocado. Using the bamboo mat, start to roll the mat away from you, tucking and rolling as you go to shape the sushi roll. Once rolled, slice into 8 even pieces. Repeat the process to make the second sushi roll.
- Transfer the sushi pieces to a serving platter. Garnish with spicy mayo and sesame seeds and serve immediately.
