Ingredients
- 1 package Qukes™, cut into thirds
- 2 packages Sprinkles® tomatoes
- 3 cups watermelon, cubed
- 1/3 cup crumbled feta cheese
- 1/4 cup mint leaves, whole
Dressing Ingredients
- 1/3 cup red wine vinegar
- 3 Tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 tsp fresh garlic, minced
- 1/2 tsp dried oregano
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 cup olive oil
Directions
- In a small bowl, combine all dressing ingredients and whisk vigorously. Set aside.
- In a large bowl, combine cucumbers, tomatoes, watermelon, crumbled feta, and mint.
- Drizzle with dressing. Toss and serve.
