Ingredients

  • 1 cup One Sweet® Tomatoes, diced
  • 8 eggs
  • 1 cup spinach, chopped
  • 1 cup full fat cottage cheese
  • ⅔ cup mozzarella cheese, shredded
  • 1 tbsp olive oil 
  • 1 tsp garlic powder
  • Salt & pepper, to taste

Directions

  1. Preheat oven to 350°F
  2. Grease muffin tin with olive oil 
  3. Fill the muffin tins half way with tomatoes, spinach, and cheese.
  4. Blend together cottage cheese, eggs, garlic powder, salt and pepper until smooth
  5. Pour egg mixture evenly into the muffin tin to cover veggies, be careful not to overfill 
  6. Top with remaining tomatoes and spinach.
  7. Bake for 25-30 min until browned and puffed up.
