Ingredients

  • 5 Qukes, sliced 
  • 1 cup low-fat cottage cheese
  • 9 light rye Swedish-style crispbreads
  • 8 oz. wild caught smoked salmon
  • ½ cup pickled onions
  • ½ cup freshly chopped dill
  • 1 tbsp lemon zest
  • ¼ cup capers
  • Crushed black pepper, for garnish

Directions

  1. Add a spoonful of cottage cheese over each cracker and spread evenly to form a thin layer.
  2. Add sliced cucumbers over the cottage cheese. 
  3. Add a small slice of smoked salmon over the cucumbers. 
  4. Top with pickled onions, dill, lemon zest and capers.
  5. Garnish with freshly crushed black pepper.
