Ingredients

SEASONED RICE

  • 3 cups cooked Parboiled rice
  • 1 tsp. soy sauce
  • ¼ tsp. dried thyme
  • 2 tsp. spicy chili crisp
  • 2 tsp. sesame oil
  • ¼ + 1/8 tsp. Salt + more to taste

CHICKEN THIGHS

  • 6 chicken thighs, deboned and skin removed
  • 2 tbsp. olive oil
  • Generous pinch of salt and black pepper

BRUSCHETTA TOPPING

  • ½ (12oz) pack Sunset Flavor Bomb Tomatoes, quartered
  • ½ (12oz) pack Sunset Honey Bomb Tomatoes, quartered
  • 1 tbsp. chiffonade basil leaves
  • 1 large garlic clove, grated
  • 2 tsp. balsamic vinegar
  • Salt & black pepper to taste

 

  • 1 fresh mozzarella ball, sliced

Directions

  • Prepare the seasoned rice by adding cooked rice to a casserole dish or small roaster. Season with soy sauce, dried thyme, spicy chili crisp and sesame oil, mix to combine. Bake on 400 degrees for 20 minutes.
  • To a large bowl, add chicken thighs, 2 tbsp. olive oil, salt and black pepper. Mix to coat evenly.
  • To a heated pan, add chicken and cook over medium-high heat, about 5 minutes on each side or until cooked through (time will vary depending on meat thickness). When chicken is done, place a slice of mozzarella over-top each chicken thigh and remove from pan.
  • To a medium bowl, add diced tomatoes, basil, garlic and balsamic vinegar, mix and season with salt and black pepper to taste.
  • When serving, add a couple tablespoons of the tomato mixture over-top each cooked chicken thigh and serve with seasoned rice.
