Ingredients

  • 15 One Sweet Tomatoes
  • 5 slices gluten-free bread, toasted
  • 5 slices deli turkey
  • 5 slices deli ham
  • 10 slices small salami rounds
  • 8 leaves butter lettuce
  • 5 slices of your favorite cheese
  • 10 baby dill pickles, sliced
  • Spicy mayo, optional for serving
  • 5 12-inch bamboo skewers

Directions

  1. Cut the bread into quarters and then cut diagonally in half to create small triangles. 
  2. Next, cut each slice of cheese into fourths and cut the slices of turkey and ham in half.
  3. Rip the lettuce leaves into slightly smaller pieces about the size of the cut cheese slices. 
  4. Assemble the sandwiches on the skewers in the following order: 2 bread triangles, 1 tomato, 1/2 slice turkey, salami, 1 cheese square, 1/2 slice ham, 1 pickle slice, 1 cheese square, 2 bread triangles. Repeat this order once more to fill the skewer, ending with one more tomato before the final two bread triangles.
  5. Plate and serve with spicy mayo for dipping if desired.
