Ingredients

Cucumber & Tomato Salad 

12 oz Qukes™ Teeny Tiny Cucumbers, diced 

1 pint One Sweet Tomatoes, quartered 

½ red onion, diced 

1 large lemon, juiced  

¼ cup fresh basil, minced 

2 cloves of garlic, minced 

1 tsp balsamic vinegar 

1 tsp olive oil 

Salt & pepper to taste 

 

Tzatziki 

2 cups plain Greek yogurt, full fat 

1 cup grated Qukes, unpeeled 

¼ cup feta, crumbled

3 cloves of garlic, grated 

2 teaspoons extra virgin olive oil

 1 tsp dried dill

Juice of half a large lemon 

Salt & pepper, to taste

Gluten-free pita or flatbread, optional for serving

Directions

  1. In a large bowl mix together all the salad ingredients until well combined and set aside.
  2. To a medium-sized bowl, add the yogurt, grated cucumber, lemon juice, garlic, dill and olive oil. Stir until fully combined then season to taste as needed with salt and pepper. 
  3. Serve the cucumber salad over the tzatziki with a sprinkle of crumbled feta if desired and warm pita for scooping.
