Ingredients
Cucumber & Tomato Salad
12 oz Qukes™ Teeny Tiny Cucumbers, diced
1 pint One Sweet Tomatoes, quartered
½ red onion, diced
1 large lemon, juiced
¼ cup fresh basil, minced
2 cloves of garlic, minced
1 tsp balsamic vinegar
1 tsp olive oil
Salt & pepper to taste
Tzatziki
2 cups plain Greek yogurt, full fat
1 cup grated Qukes, unpeeled
¼ cup feta, crumbled
3 cloves of garlic, grated
2 teaspoons extra virgin olive oil
1 tsp dried dill
Juice of half a large lemon
Salt & pepper, to taste
Gluten-free pita or flatbread, optional for serving
Directions
- In a large bowl mix together all the salad ingredients until well combined and set aside.
- To a medium-sized bowl, add the yogurt, grated cucumber, lemon juice, garlic, dill and olive oil. Stir until fully combined then season to taste as needed with salt and pepper.
- Serve the cucumber salad over the tzatziki with a sprinkle of crumbled feta if desired and warm pita for scooping.
