Ingredients

  • 3 packages Kumato® Tomatoes (9 in total)
  • 2 tbsp EVVO
  • 1/2 sweet onion chopped 
  • 5 garlic cloves minced 
  • 1 can brown lentils rinsed and drained 
  • 1/4 cup chopped green pitted green olives 
  • 1/4 cup chopped almonds or pistachios 
  • 1/2 cup panko breadcrumbs 
  • 2 tbsp chopped parsley 
  • 1 tsp paprika 
  • 1 tsp cumin
  • 1/2 tsp ground coriander 
  • 1/4 ground cinnamon
  • 1/4 tsp ginger powder 
  • Pinch cayenne pepper 
  • Salt & Pepper to taste

Directions

  • Preheat oven to 350 degrees and lightly oil a baking dish. Slice the tops of the tomatoes then spoon and discard the pulp inside, make sure to save the tops. 
  • Make the filling by adding 1 tbsp of olive oil to a skillet, cook the garlic and onion until soft and fragrant. Take off heat then combine the rest of the ingredients-lentils, olives, almonds, breadcrumbs, parsley and spices. 
  • Spoon mixture into the tomatoes until it’s filled then cover with the tops of the tomatoes. 
  • Repeat for all and bake uncovered for 30-35 min. 
  • Serve with fresh pita, hummus, labneh and a side salad.
