Ingredients
12 oz Flavor Bombs® Cherry Tomatoes On-the-Vine, divided
2 cups orzo, cooked
1 cup Baby spinach
4 Basil leaves, chopped
¼ cup creamy goat cheese
3 tbsp extra virgin olive oil, divided
½ tsp sea salt
½ tsp paprika
1 tsp garlic powder
½ tsp crushed red pepper flakes
½ tsp oregano
½ tsp black pepper
Parmesan cheese, freshly grated for garnish
Basil leaves, optional for garnish
Directions
- Pre-heat oven to 425°F. Take 1 stem of tomatoes and coat with 1 tbsp olive oil. Place on baking sheet and roast for 10 minutes.
- Remove remaining tomatoes from the vines and add to a large cast iron skillet over medium-high heat.
- Drizzle olive oil and salt over tomatoes and gently mix as they begin to swell and burst.
- Add basil and spinach. Once spinach wilts, add all spices and combine well, using the back of a fork or spatula to simultaneously mash the tomatoes.
- Add goat cheese and combine with tomato mixture to form a creamy sauce.
- Add cooked orzo and gently mix until well combined.
- Top with roasted tomatoes.
- Garnish with fresh basil and freshly grated Parmesan cheese.
