Ingredients
- 1 pint Zima® tomatoes, divided
- 1 small shallot, chopped
- 2 Tbsp. chopped chives
- ¼ cup champagne vinegar
- 2 tsp. honey
- ½ cup extra-virgin olive oil
- 4-5 mixed citrus (i.e. blood orange, cara cara orange, grapefruit, navel oranges, etc.), peeled and sliced into rounds
- 1 small head of radicchio, chopped
- 2 oz. shaved ricotta salata
- ½ cup extra-virgin olive oil
- Kosher salt
Directions
- In a blender, combine 1 cup of Zima® tomatoes with the shallot, chives, champagne vinegar, and honey. Blend until smooth. Slowly drizzle in olive oil until fully emulsified. Taste and season with Kosher salt as desired.
- On a serving platter, arrange the citrus slices, radicchio, and ricotta salata. Halve the remaining Zima® tomatoes and arrange on top of the salad. Serve with dressing, to taste.
