Ingredients

Soup: 

  • 2 lbs Campari® Tomatoes, halved
  • 1 white onion, chopped
  • 1 tbsp olive oil
  • 1 head of garlic
  • 1 sprig of fresh thyme
  • 1 sprig of fresh oregano
  • 1 cup vegetable stock
  • ½ cup heavy whipping cream

Grilled Cheese Croutons: 

  • 2 slices bread
  • 2 tbsp butter
  • ⅓ cup cheddar cheese, shredded

Directions

  1. Preheat oven to 400F. 
  2. Place tomatoes, onion, garlic, and fresh herbs on a parchment-lined baking sheet. Drizzle with olive oil. 
  3. Place the baking sheet in the oven and roast for 40 – 45 minutes or until soft. 
  4. Transfer ingredients to a blender, adding vegetable stock and heavy whipping cream, then blend until smooth. 
  5. Prepare the grilled cheese by spreading butter on one side of bread slice and put slice butter side down in hot pan.  Top with shredded cheese and second piece of bread, butter side up.
  6. Cook for 2-3 min per side, flipping halfway. Remove from pan and cut it into cube-like crouton shapes. 
  7. Add soup to bowl and garnish with the grilled cheese croutons.
