Ingredients

  • 1 cup Wild Wonders Tomatoes, diced
  • 1 cup Lollipeppers Mini Peppers, sliced
  • 1 cup Sweet Potatoes, diced
  • 1 Avocado, sliced
  • 1 ½ cups Quinoa
  • 2 handfuls Kale, chopped
  • 1 block firm Tofu, cubed 
  • ¼ cup Balsamic dressing 
  • ¼ cup Tahini
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & pepper, to taste

Directions

  1. Preheat oven to 375°F.
  2. Coat sweet potatoes with olive oil, salt and pepper, onion powder, and garlic powder.  Add to a baking sheet and bake for about 25 minutes, turning them halfway.
  3. While potatoes are roasting, cook cubed tofu in airfryer at 400°F for 12 minutes. 
  4. To assemble, add handful of kale to a bowl, drizzle with olive oil and massage with hands or a pair of tongs for 5 minutes. 
  5. Next add quinoa along with cooked sweet potatoes.  Top with tomatoes, mini peppers and half the avocado. 
  6. To make the dressing whisk together tahini and balsamic dressing.  Pour over the bowl and enjoy!
